Plotters outline; Pantsers don't. One way to keep on track is to use a highly-charged emotional scene as a lighthouse, a beacon, and keep it in mind during the writing process. (Can also be used by plotters in the outlining process.)

In fact, you can use this scene to build an entire novel around. In this talk I'll discuss why this has worked for me in many of the novels that I have written.
